Cooking Time Calculator

Take the guesswork out of roasting meats and poultry to perfection. Based on USDA Food Safety and Inspection Service (FSIS) thermal guidelines, this tool calculates oven roasting duration, recommended oven temperature, target internal meat temperature, and essential resting periods.

Estimated Roasting Time: 1h 39m

Specific cut of poultry, meat, or fish

Raw weight in pounds (lbs) as marked on butcher packaging

Estimated Roasting Time
1h 39m

How to Use This Calculator

  1. Select your cut of meat, poultry, or fish from the dropdown.
  2. Enter the packaging weight in pounds (lbs).
  3. Preheat your oven to the specified temperature.
  4. Insert a digital meat thermometer into the thickest part and roast until reaching target internal temperature.
  5. Rest meat tented loosely in foil for the specified minutes to redistribute savory juices.

Formula & Calculation Methodology

Cook Time (Minutes) = Weight (lbs) × Minutes_Per_Pound (rate)

Cooking time models heat penetration by weight for standard roasting cuts. Meats must reach USDA minimum internal temperatures measured at the thickest part without touching bone to ensure pathogen destruction.

Weight (lbs)Total raw weight of meat before seasoning
RateThermal conductance coefficient in minutes per pound (e.g. 22 min/lb for whole chicken)
Internal TempUSDA core endpoint temperature ensuring food safety

Worked Example

Roasting a 4.5 lb whole chicken at 375°F to USDA safe internal temperature

meatType: whole_chicken
weightLbs: 4.5
Result: 1h 39m roasting time (99 minutes, 165°F internal temperature, 15 min rest)

Frequently Asked Questions

Why should I always rely on a digital meat thermometer over time alone?↓

Oven calibration, starting meat temperature (fridge-cold vs room temp), and bone-in versus boneless cuts cause roasting time variations of 10% to 20%. The digital probe thermometer is the only definitive indicator of doneness and safety.

Why is resting meat after roasting so important?↓

Resting allows muscle fibers contracted by oven heat to relax and reabsorb internal juices. Carving immediately causes juices to purge onto the cutting board, resulting in dry, chewy meat.

What is carryover cooking?↓

Large roasts continue to rise in internal temperature by 5°F to 10°F during the first 10 minutes of resting due to residual surface heat. Remove roasts from the oven when they are 5°F below final target temperature.

What limitation exists for stuffed poultry?↓

Stuffing inside a turkey or chicken cavity slows heat penetration significantly and must also reach 165°F (74°C). USDA recommends roasting stuffing in a separate baking dish for optimal food safety.
